Estancia VIK Jose Ignacio boasts a brick barreled dining room which is well suited for forty to fifty guests, or an intimate dinner for two. The brick walls extend down to a wine cellar below and continue up to the vaulted ceiling. A work of master craftsmen, the barreled brick room and ceiling were created without the use of any mortar. The dining room sits on a wood beam floor with glass windows imbedded in each corner, suspended above the wine cellar creating an incredibly unique space. The culinary offerings at Estancia VIK Jose Ignacio celebrate the dishes of Uruguay. At the dining room, guests will enjoy International cuisine with fresh regional products for breakfast, lunch and dinner
A traditional Uruguayan barbeque stands at the north side of the Estancia, mirroring the ancient tin galpons found wherever the gauchos roamed. Likewise, this barbecue has been constructed with traditional tin walls and a large central fireplace, or fogon. Marcelo Legrand, another notable Uruguayan artist who also designed one of the Estancia’s suites, has painted the walls and ceiling in a brilliantly chaotic style, bringing a contemporary flair to this traditional space.
El Asador will feature the finest local and seasonal ingredients cooked by Executive Chef Marcelo Betancourt and his team select the best ingredients available each morning within the retreat’s traditional Uruguayan barbecue dining room.
